Offering a unique dining experience unlike any other, The cave by Chef Ryan Clift is a restaurant that takes place inside its namesake – a natural subterranean cave. Nestled within the five-star clifftop resort, The edge Bali, the restaurant was built while preserving the natural stalactites and stalagmites inside, giving diners an inimitable experience of dining inside a cave.
The cave not only offers a magnificently mesmerising location but also meticulous flavours. Famed and talented chef Ryan Clift crafts the rotating menu comprising innovatively refined dishes. As the culinary director of the establishment, Ryan puts his trust in highly skilled Head Chef Tay Chan Yong to helm the kitchen.
The restaurant offers a seven-course lunch and dinner set menu daily, except Mondays when The cave by Chef Ryan Clift is closed for lunch. On Thursdays to Sundays Chef Chan has created a few add-on dishes for diners that creates a more extensive dining experience. The menus change seasonally based on the freshest and best-quality ingredients available, with some of the signatures staying or getting slightly tweaked.
The current menu starts with the Parker House Roll with kampot pepper butter; nori cannelloni with ricotta, dates and shio kombu; and crab croquette comprising crab salad, salted egg sauce and garlic chip.
Continue with the unique tomato water with baby tomato, basil and wasabi, an all-time favourite. The foie gras with puff quinoa, mandarin and espresso yogurt is also divine. Before going on to the dessert, the mains see butterfish with nitro pomelo and tanako sauce; and venison with pickled blackberry, coffee mousseline and eucalyptus.
As the cherry on top of The cave experience, a series of enchanting video mapping installations is projected onto the textured cave walls, providing inspiring entertainment in between the courses. The show is accompanied by ambient music and narration, creating quite a display in the already breathtaking venue.
