Black Angus Beef Tartare

The young Chef de Cuisine Albin Gobil brings his decade-long education of working in multiple Michelin star kitchens in Europe, implementing modern-classic culinary style to the venerated French fine dining venue. Among his creations are expertly crafted favourites like black Angus beef tartare with Tarbouriech oyster, French baerii caviar and confit quail egg; Brittany langoustine and kaviari kristal caviar; and Rugh Estate roe deer with parsnip, redcurrant and sauce Grand-Veneur. 

The first restaurant to bring the Chef’s Table concept to Hong Kong and the Far East, guests are pampered with the curated dishes from Chef Gobil and his team, while having a front row seat to the theatrics and commotions of the illustrious kitchen. The restaurant serves options of a three-course or four-course lunch menu, as well as a must-try four- or six-course degustation option.
