The appetiser seafood platter on ice showcases the freshest flavours of the ocean, including oysters, tiger prawns and scallops, served with raspberry mignonette sauce and Alila garden chili mayo. The ceviche combines citrus, passion fruit, coconut cream and fresh herbs, creating a refreshing and tangy starter. For something more substantial, there’s the roll with wasabi mayo, togarashi, salmon roe and a brioche bun.
Moving on to the entrées, guests can savour the croquettes with lemon remoulade and the bisque cappuccino with coconut cream and brandy. The ravioli, served with gorgonzola sauce, caramelised onion and sage, offers a rich and savoury profile.
