A vibrant dining spot in Seminyak, Makase at Hotel Indigo Bali Seminyak Beach celebrates Southeast Asia’s street food with flair, flavour and an unforgettable sense of theatre.

Makase, the signature restaurant of Hotel Indigo Bali Seminyak Beach, has unveiled a refreshed menu that guides diners through Southeast Asia. Executive Chef Heri Riskiawan Efendi draws inspiration from the region’s bustling street food culture, reinterpreting beloved classics into refined yet approachable dishes.

The dining experience is as much about presentation as it is about taste. Guests are treated to beautifully plated food paired with a sense of theatre. A highlight is Makase’s take on Konro Bakar, a Sulawesi-style braised beef rib. Cooked with traditional spices, peanut sauce and Sambal Colo Colo, it is finished at the table, where the host demonstrates the pouring of the sauce, turning service into spectacle and flavour.

Seafood plays a central role, with dishes such as Ikan Bakar Jimbaran, a grilled snapper served with Sambal Matah and Dabu Dabu, and the comforting Seafood Laksa Singapore. Other regional favourites include Thailand’s pad thai with tofu, Vietnam’s pho bo and Malaysia’s Grilled Catch of the Day, each crafted to retain authentic taste while offering a modern dining touch.

Ayam Bakar is a crowd-pleaser for poultry, with whole baby chicken paired with pumpkin shoot and chilli jam. Those who enjoy Thai flavours will also appreciate Larb Gai, minced chicken with mint, Thai basil and sweet chilli sauce.

Desserts are designed to impress. The standout is mango brown rice, where the host artistically paints a wooden plate lined with banana leaves. Featuring Jatiluwih organic brown rice espuma, mango sorbet, coconut panna cotta and a delicate micro cake, this sweet finale is as visually striking as it is memorable.

Makase’s welcoming setting enhances the experience further. The restaurant blends modern design with warm neighbourhood charm, offering indoor and outdoor seating for up to 110 guests. An open kitchen adds to the lively mood, inviting diners to watch the chefs at work.

Open daily from 6.30am to 11pm, Makase stays true to its commitment to sustainability and local sourcing. Its balance of authenticity, creativity and thoughtful presentation delivers a celebration of Southeast Asian flavours that lingers well beyond the last bite.
