Peanut Honey Granola
Ingredients
½ cup peanut butter
½ cup honey
A dash of vanilla
A dash of salt
1 cup oats
2tbsp oat flour
Berries and tangerines for topping
METHOD
Combine peanut butter and honey. Mix until smooth.
Add vanilla and salt, mix well.
Add oats and oat flour. Mix until crumbles are formed.
Top it off with fruits of your liking.
Strawberry andFeta Garden
Ingredients
1 cup strawberries, sliced
¼ cup mint leaves
¼ cup feta cheese, crumbled
1tbsp wine-based vinegar
½ olive oil
Salt and pepper to taste
Ingredients
Sprinkle salt and pepper on top of the sliced strawberries.
Sprinkle the crumbled feta cheese on top.
Whisk vinegar, olive oil and mint leaves. Pour on top of the strawberry mix.
Cucumber Salad
Ingredients
1 large cucumber, sliced
¼tsp salt
½ cup fresh mint leaves
½ cup red onion, thinly sliced
2tbsp extra-virgin olive oil
1tbsp white balsamic vinegar
Method
Mix cucumber slices and salt together, let drain. Add red onion and mint leaves.
Whisk olive oil, balsamic vinegar and a dash of salt. Pour over the cucumber.
