Nestled within the ever-majestic The Apurva Kempinski Bali in Nusa Dua, Koral Restaurant is the island’s first underwater dining experience, offering a multi-sensory journey. Helmed by Michelin-starred background Executive Chef Jean-Baptiste Natali, the restaurant has become a favourite among discerning travellers and local food enthusiasts since opening in 2019.
As you descend the stairs, you will be immediately captivated by the vibrant marine life. Inside the restaurant, the warm teak ceilings and walls constructed from traditional red clay bricks frame the breathtaking underwater views. Below, elegant black and white tegel tiles further enhance the sense of refinement. Within the vast aquarium, tropical fish swirl in a kaleidoscope of colours, providing a mesmerising backdrop to the dining experience.

At Koral Restaurant, diners indulge in sophisticated dishes inspired by fresh and finest local ingredients combined with French culinary mastery. Chef Jean-Baptiste and his talented team have carefully curated a range of set menus featuring premium ingredients and chef’s specialities, highlighted in the six-course Koral Zen degustation menu, the five-course Koral Gourmet menus and the four-course Koral Experience. A diverse selection of seafood, meat, vegetarian and vegan dishes ensures there is something for every preference.
In its casual fine dining atmosphere, Koral Restaurant also boasts an enticing selection of artisanal drinks from the bar and cocktail cart. Guests are invited to share their preferred flavours with the skilled mixologist, who will perform the art of creating bespoke cocktails right at their tables.
