Ducks have long played a big role in Balinese farming life. Ducks used to be considered sacred to the extent that only kings, queens or priests could savour them as a meal. These days, however, Balinese-style crispy duck has become a favourite for diners everywhere. At Kunyit Restaurant, Chef Ketut Suwantra adds rice flour to the basa genep – a traditional Balinese sauce made from shallot, garlic, coriander, ginger, turmeric, chilli and other herbs – to create a more modern twist to the dish. The chef’s special technique in frying the duck also guarantees soft and tender meat.
