Remarkably Chef Made has worked in the kitchens of The Laguna, a Luxury Collection Resort & Spa, Nusa Dua, Bali for almost 21 years and has contributed significantly to developing its status as one of Nusa Dua’s most prestigious resort-based dining experiences.
Chef Made isn’t just busy in the kitchen, since 2008 he has served as president of Bali’s elite Bali Culinary Professionals (BCP) Association, and is a member of WACS (World Association of Chefs’ Societies). A passionate competitor, he has also won a plethora of awards, including King of Kitchen, Southeast Asia and Indonesian chef of the year in the Hospitality Asia Platinum Awards, as well as being six times winner of Super Chef on Indosiar TV’s Allez Cuisine, a prestigious national cooking competition.
His vast repertoire ranges from exquisite wine dinners to beachside events, from foie gras to grilled fish. His signature dish is without doubt his classic Lobster Thermidor.
Chef Made’s philosophy is to always cook fresh and honest food. To this end, he ensures discerning diners have only the very best and brings in delicately flavoured spiny lobsters from Indonesia’s Arafura Sea that he turns into a tantalising, Cognac-flamed delight that deservedly takes pride of place on the Arwana menu.
