The southern Italian region is known for its unique landscapes of white-washed streets in Ostuni, distinctive trulli houses in Alberobello, and the Baroque piazzas in Lecce. In addition to the visual feast, Puglia is also known for its signature dishes.

The culinary offerings of Puglia are marked by the use of fresh and predominantly locally sourced produce – including seasonal and local plant sources – and olive oil. At MAURI, the ingredients are treated with the utmost respect to bring out their true flavours, and homemade items are used as much as possible. 

The restaurant, situated in one of Bali’s most vibrant eat streets, is designed by respected firm Ushers By Design, showcasing a two-storey painted venue with minimalist interiors and architecture, accentuated by aesthetics of the iconic coastal town that is Puglia. Comprising a floor-to-ceiling open atrium, a central grand staircase and an open kitchen, the restaurant is an alluring sight to behold. From the outside, the façade is a take on Ostuni’s traditional stucco houses. A giant skylight above the atrium dining area is homage to the legendary Castel del Monte. 

Discerning diners can choose from the Signature Tasting Menu, Discovery Tasting Menu, or the à la carte menu, while for a front-row access to the culinary magic, opt for a private tasting with Maurizio at the Chef’s Counter.

Emphasising the use of the freshest ingredients, the menus change regularly, but some of the memorable delectable delights are the Gamberi Rossi, comprising Japanese sweet prawn, pomegranate, almond, burrata, lemon sabayon and Siberian caviar; and Filleto di Manzo, crusted black Angus beef tenderloin, cauliflowers, porcini cream and Primitivo jus.
