Foie Gras Parfait & Smoked Goldband Snapper

Start with the foie gras parfait with sauternes, blackcurrant, hibiscus and semolina crackers; and the smoked goldband snapper with citrus dressing, avocado and plantain crackers. One of the delectable highlights at Santanera is the Aguachile, comprising Hokkaido scallops, avocado and cassava crackers. Savour hearty seafood mains, such as the crowd favourite char-grilled octopus with cabbage, chilli and lemon emulsion; or the seafood casserole with slipper lobster, baby squid, octopus and confit potatoes.
