For Pastry Chef Katarina Sari at Grand Nikko Bali, the perfect dessert must have three textures to complete the palate: soft, crunchy and cold. So unsurprisingly, her Milk Chocolate Cheesecake served at The Shore Restaurant & Bar does just that, and we can’t get enough of it. It is a playful spread of three sweet components, with the chocolate cheesecake itself taking centre stage. Katarina blends high quality chocolate with a rich cream cheese, creating a smooth cake layered with a velvety, spongy texture.
Then to tick off the crunchy and cold aspects, on either side of the cake is a crisp yet squishy macaron to the left, and a lemon and basil sorbet to the right, finished with a brush of anise strawberry ganache and a sticky chocolate glaze. It is the best of both worlds in the sense that it provides just the right amount of sugary goodness without being too heavy, making it the perfect treat to enjoy at this breezy beachfront restaurant.
