Ryu Fujii Bar Take Over at Pasola Lounge

On 8 August 2019, Pasola Lounge at The Ritz-Carlton Jakarta, Pacific Place invited Ryu Fujii from Bar K in Osaka to be its guest bartender. A native of Japan, Ryu, who won the 2016 World Class Japan competition, has for the past decade helmed Bar K, a small bar known as one of Osaka’s best spots for Japanese whisky since it first opened in 1988.

Ryu’s cocktails for the night included Bitter First, a combination of Johnnie Walker Gold Label, double IPA syrup, lemon juice, soda water and orang tincture that rendered a fresh taste on the palate. Mid Time, meanwhile, is a refreshing cocktail made with 23 Ron Zacapa, orange curacao, lemon juice, water and coffee beans. The coffee infusion adds a touch of bitterness at the end contrasting perfectly with the sweetness. Aromatic and cooling, Summer Cup comprised Tanqueray No. 10, green chartreuse, lime sherbert, soda water and Thai basil or lemon leaf.

The favourite of the night was undoubtedly Long Life Boulevardier, based on Bulleit Bourbon and mixed with Campari and yomeishu. Last, but by no means least, Inner Maquillage was made with Don Julio reposado, lime juice, beetroot juice, lemongrass syrup and cacao bitters – an ideal tipple after a hard day’s work. With a great ambience and vivacious crowd, Ryu was all smiles while creating his cocktails.
