One of Singapore’s reigning mixology bars, Néktar opened in 2010 just when the island city-state was seeing an innovative transformation in its cocktail scene. The courtyard bar serves up drinks that are not only technically sophisticated, but they look and taste great too, with a perfect example being our favourite, the Serendipity. Based around rum to give the same taste experience as a Mojito or Piña Colada, the Serendipity is freshened up with lemon juice, passionfruit and four chunks of pineapple, then sweetened with an intriguing caramel tea reduction. That’s where the complex flavours come from. Finished off with foamy egg whites and half a passionfruit housing a couple of raspberries, it’s fruity, fancy and really fun to drink.
