After the success of steakhouse SIR LOIN, the 1010 Group presents an elevated dining destination serving modern Japanese grill with SILO. Situated on the second floor of SIR LOIN, SILO showcases minimalist contemporary Japan-inspired décor, further enhancing its intimate and sultry atmosphere. 

Reserve and Aged Cuts

At SILO, not only can you indulge in premium steaks but also learn about the different cuts, the origins, and the meticulous aging process through a bespoke experience. The kitchen team is inspired by the Japanese culinary techniques in terms of preparation and presentation. The freshness of the ingredients, and the refined textures and flavours are paramount. SILO carries three categories of signature meats: reserve, dry-aged and nikutama, each of which is complemented by a different finish to further elevate the flavour. 

Start with Japanese-inspired appetisers, like hamachi carpaccio with jalapeno, micro greens, cilantro and ponzu sauce; and wagyu sushi roll with rib-eye MB7, tiger prawn, yuzu kosho and teriyaki sauce. 

On the main course section, the wagyu truffle gyudon is a must-try, with MB5 striploin, black summer whole truffle, Hokkaido ikkura, and teriyaki sauce. The grilled lobster with creamy furikake, potato, mushroom and micro greens is also to die for. Save some space for the roasted honey bell pepper salmon with sweet potato purée and mushroom. Try the smoked garlic potato purée and truffle fried rice for side dishes. 

When it comes to the meat, the Japanese A5 wagyu rib-eye and Japanese A5 striploin make a great start, grain-fed for 600+ days in Kagoshima. The chateaubriand is also a popular choice, showcasing Japanese A5 tenderloin, 600+ days grain-fed from Kagoshima; as well as the Zabuton for Nikutama, served with onsen egg. All meats will be grilled by the chef right at your table, adding a personalised touch to your experience.
