At the helm of T’ang Court is Chef Chong Kooi Sam, a master of Cantonese cuisine whose passion for food is deeply rooted in his childhood. He grew up in a traditional Chinese-Malaysian home, and his early love of cooking was inspired by helping and observing his mother in the kitchen. His ability to use flavours and techniques had a profound and long-lasting effect on him. Throughout his career, Chef Sam has brought his expertise to the dynamic kitchens of Kuala Lumpur, Dubai and Shanghai, where he refined his skills and mastered the art of blending tradition with creativity. Now at T’ang Court, he fully embraces Jakarta’s abundant fresh seafood and diverse ingredients, finding energy and inspiration in the city’s vibrant and ever-evolving culture.

Chef Sam’s skill is evident in every dish. Signature dishes like Peking duck, and vegetarian winter melon white fungus soup showcase his ability to balance flavours and textures.
