Since its inception in August 2012, Zibiru has been a beloved Seminyak establishment, renowned for its made-from-scratch regional Italian cuisine. Over the years, it has captured the hearts of food enthusiasts, wine connoisseurs, jazz music aficionados and romantics in search of an intimate dining experience. Now, Zibiru embarks on an exciting new chapter with the arrival of its new Executive Chef, Gianluca Visciglia, all while honouring the legacy of Chef Luigi Calcagno.

Chef Gianluca’s culinary journey began in the picturesque town of Merate, nestled between Milan, Como and Bergamo in northern Italy. It was here that his passion for food began to blossom, laying the foundation for a remarkable career in the culinary arts. Gianluca’s culinary adventures took him to Florence, Tuscany and the captivating Chianti hills, where he honed his skills and immersed himself in the intricacies of Tuscan cuisine.

With over two decades of culinary expertise, Chef Gianluca has made his mark on the global culinary stage, with culinary sojourns spanning Indonesia, the Philippines, Oman and back to Indonesia, where he found his culinary home in Bali. His unique culinary style draws inspiration from a rich tapestry of memories, from his early years in northern Italy to his formative experiences in Tuscany, and his family roots in southern Italy, particularly Puglia. This diverse background infuses Zibiru’s menu with authentic modern Italian cuisine, offering a comprehensive culinary journey from the northern regions to the southern shores of Italy.

The menu entices diners with its authentic regional Italian cuisine. Among its remarkable dishes, the Tortellini in Brodo stands out as a signature delight. This Zibiru classic features housemade ring-shaped pasta filled with a savoury blend of pork, beef, parmesan cheese and herbs, served in an organic free-range chicken broth. A symphony of flavours and textures, it exemplifies the restaurant’s commitment to creating exceptional Italian fare that transcends expectations.

Zibiru has recently introduced a brand-new bar and lounge to its repertoire, providing a haven for those seeking top-tier spirits and meticulously crafted cocktails. However, it’s not just about the libations; Zibiru’s bar also boasts a distinct feature – an exclusive vinyl music collection personally curated by Luigi during his extensive travels over the years. To elevate the auditory experience, the venue has invested in custom-made sound equipment meticulously handcrafted in Italy, making it a must-visit destination for discerning music enthusiasts.
