In true commitment to quality, the sushi is elevated through the use of Akazu, an aged sake lees red vinegar rich in umami, and rice that is polished daily in-house for peak fragrance and texture. Signature dishes include the colourful seven-piece Temari Zushi, indulgent duck duck foie, delicate halibut mizosuke, delectable Kakubin Karubi flambé and the SO Alaska dessert.
