Grilled fish of the day – Barramundi with anchovy dressing and chicory

Having already cemented its status as one of Bali’s most innovative dining venues, Uni has recently reopened, adapting and embracing a series of enticing changes for the beloved local eatery.

The man behind Uni’s grand concept, Steven Skelly, is no stranger to the demands of the burgeoning Balinese food scene having spent years in the role of executive chef in Mexicola group. Sensing a change in local dining habits, alongside Uni’s existing five-course set menu, the creative culinary mastermind has introduced a brand-new array of à la carte dishes.

Maintaining its reputation as a contemporary seafood restaurant, in its rotating menu Uni will increasingly weave in inspiration from a global palate of flavours, with a collection of casual plates changed weekly to maintain the fresh concept.

For starters, Uni’s prawn rolls are a great appetite booster, consisting of minced prawn, 1001 island dressing and iceberg lettuce between soft bread for an eclectic light bite. Then there’s the signature sourdough served with tasty homemade sea salt butter. On the mains menu, Poche grilled organic chicken will entice with its smoky, juicy combination, served with burnt sourdough sauce and jus gras. Another fine selection would be grilled fish of the day, such as tasty barramundi glazed with anchovy dressing and chicory.

To wrap up the dining occasion with style, try the excellent desserts, such as chocolate mousse, offering a grand combination of chocolate goodness, black sesame, cocoa crisp, salt and evco. The new dishes will be served alongside the same creative cocktails and an impressive array of natural wines. Try Uni 7 for an ultimate refresher, concocted from a fine blend of Aperol, coconut liquor, peach puree, lime juice and tonic.

It’s not just the fare that has embraced change. Uni’s interiors have been revamped with the works of a cluster of world-renowned street artists, like Yaz, lining the walls. A new musical component will also liven the scene with DJs taking up residence weekly. Pantai People will take to the decks every Saturday night, and play right through to the early hours, while every fortnight on a Friday evening there will be Kitchen Sessions with DJ Kaiser Waldon setting up his decks in the kitchen.
