CHICKEN TOO-TOO
S.K.A.I Beach Club is the ideal place to hang out and enjoy Bali’s hot and sunny weather, as well as its gorgeous sunsets over Legian Beach. But it’s not just the weather that is hot at S.K.A.I – the chef’s signature dish is his version of the spicy traditional Balinese chicken betutu, which he has reinvented as Chicken Too-Too.
This colourful dish is rich and tasty, packed with genuine Balinese flavours as it is cooked in a complex mix of spices that include garlic, turmeric, ginger, candlenut, chilli and shrimp paste. At S.K.A.I, the Chicken Too-Too comprises a half Balinese spring chicken cooked with spicy cassava leaves and a bright yellow curry sauce, served with steamed rice and sambal matah, the spicy Balinese chilli condiment. It’s a modern, lighter version of the original that retains the genuine taste.
