Nestled comfortably amidst the breathtaking cliffs of Uluwatu’s southern coast, Karma Kandara is a staple of luxury in every sense of the word. With a menu that has been perfected to compliment its open-air, tranquil setting, the five-star resort’s diner, di Mare, has gained popularity through the pure quality of its food since opening doors to the public. The venue is open all day, with a signature breakfast spread to start the day, an à la carte lunch menu, and a set course selection for dinner. The skilled culinary team, led by Executive Chef Joseph Antonishek, has never been short of ideas to optimise the array of world-class dishes to maximise the experience of everyone who enters. 

Spiced Duck & Foie Gras Terrine

The award-winning di Mare takes guests on a never-seen-before journey of worldwide culinary excellence, inspired by flavours from around the globe. The signature cuisine is locally focused sourcing rare ingredients from all over the Lesser Sunda Islands archipelago, enhanced with Japanese seafood and Australian meats. Additionally, rare local ingredients are also used, and combined with Mediterranean cooking techniques,as the freshness of each tasty layer is highlighted in mouthwatering fashion.

The menu contains something to satisfy every palate at any time of day. di Mare offers a selection of signature coffees, cold or hot, such as the Karma Frappe, Coffee Tonic or Coffee Cola. Vitamin boosters and cleansers are also available to uplift the spirit and clear the mind. The restaurant provides its own branded wine and hosts guests within a dedicated wine lounge next to the dining room for a pre or after-meal spot. Additionally, the listings of cocktails go on and on with an array of premium spirits on offer.

Shellfish Chowder

Working over to the starters, the plethora of appetising bites has been mastered to prepare the senses for an immaculate meal. There’s likely always something visitors haven’t tried before, from seafood like yellowfin tuna tartare, shellfish chowder and snapper crudo to the unique and delectable frog legs, served in garlic butter and hot chillies.

Moving to the mains page, guests are spoiled with the selection of protein providers. Between the Hokkaido scallops with uni noodles, duck breast with rosella jus and Miyazaki A5 wagyu beef with miso tasty demiglace, there’s something out of the ocean for everyone. Additional options of pork tenderloin, duck breast, lamb loin and ribeye steak are also prominent on the plates of diners at the stellar venue. Six- and seven-course tasting menus are also on display for those who just can’t decide. Additionally, a large choice of vegetarian options is also on offer.

The Ocean Initiative

How about dessert, where guests at di Mare are rewarded with the additional comfort of temperature-controlled sweets, in the form of Tira-Rindu, an Indonesian-inspired tiramisu, Bubur Injin containing Balinese sticky black rice pudding and ripe mango, and The Ocean Initiative containing purple ubi coconut panna cotta, white chocolate and passionfruit confections.
