E: What inspired you to pursue a career as a bartender, and what do you enjoy most about the profession?
A: It’s a question I’ve been asked for a long time, and honestly, it feels like a happy accident. I studied communications at university, which is quite different from where I ended up. My inspiration came from places like Hard Rock Bar, where the atmosphere is more relaxed. I was drawn to the appearance and attitude of bartenders—they often have tattoos and piercings, which I found appealing. It seemed like one of the few professions, alongside music, where you could genuinely express yourself.
E: How do you stay updated on the latest trends and techniques in the world of mixology?
A: Staying updated is crucial, especially in today’s world, where information is easily accessible. Platforms like Instagram are beneficial; I follow accounts like the world’s 50 Best Bars to monitor the venues and their menus. I also stay informed about current trends in hotels and events, ensuring I participate in bar takeovers whenever possible.
As for learning techniques, I’ve benefitted greatly from the guidance of senior bartenders who taught me early on. Observing others is invaluable, especially during takeovers, where there’s much knowledge to gain. I often turn to social media and platforms like YouTube for fresh ideas and new techniques.
E: Can you share a memorable experience behind the bar with a customer or while crafting a drink?
A: One of my most memorable experiences happened when I started working at Bar Kotak. I was only three days in and still struggling to memorise the menu while on a solo shift. Suddenly, a guest approached me with a question about a specific cocktail.
I hadn’t yet learned much about it and I could feel the pressure mounting as they realised I was new. They politely asked, “Are you still learning the ropes?” It was a bit embarrassing but a valuable lesson in humility and the importance of being honest with customers. That experience taught me that everyone starts somewhere and it’s okay not to have all the answers immediately. It encouraged me to keep learning and improving, and moments like these have shaped my journey as a bartender.
E: How do you balance creativity with the classics when crafting new drinks for your menu?
A: Always refer to the Mother of Cocktails, which is the foundation for many classic drinks. Maintaining that balance is essential so we don’t stray too far from established cocktails. My approach involves mixing local ingredients or variations to give a fresh twist while keeping the core recipe intact. Essentially, we’re not reinventing the wheel but enhancing it with unique flavours. By respecting the classic formulas and incorporating new elements, we can create something exciting that still honours the roots of mixology.
