Seasalt at Alila Seminyak

La Mer

Situated conveniently on Seminyak Beach, Seasalt offers meticulous seafood-based goodness in a stunning dining venue. The eclectic interior design, enhanced by its perfect beach location, has a great layout, especially the outdoor tables at sunset.

With a deep focus on sustainability, Seasalt’s seafood is wild-caught and sustainably harvested from the waters around Indonesia. Partnering with Bali Sustainable Seafood, the local social enterprise provides high-quality seafood that is sustainably fished. The restaurant also pays homage to locally sourced ingredients, such as natural and organic Kusamba salt from salt farmers in East Bali, who still produce salt the traditional way.

Seasalt strives to implement its sustainable, zero-waste concept behind the bar as well, reusing, fermenting, recycling and upcycling ingredients that would otherwise be discarded as trash. Think leftover fruit juices, fruit rinds and fruit seeds saved from the scrap heap, now strutting their stuff in exciting ocean-inspired signature cocktails. Seasalt also implements the use of edible rice straw to replace the use of paper and sugarcane straws. The rice straws have longer durability when in contact with water. In addition, as these straws are made out of rice, they are edible on it’s own, when deep fried to be crackers or when boiled to be pasta.

One of Seasalt’s most original and unique cocktail creations is Stretched Pineapple. A concoction inspired primarily by the idea of stretching the use of pineapple including every part – juices from the main body, fermenting the skin for a surprise twist, and the leftover from the juice to snack on. By fermenting leftover pineapple skin and leaves, Seasalt has successfully made its own liquid base for this unique one-of-a-kind refreshing cocktail.

Another of Seasalt’s noteworthy signature cocktails is La Mer, a distinctive and tasty concoction that features oyster-infused vermouth, made by cleaning, crushing and soaking leftover oyster shells in aromatic fortified wine, served along with fresh thyme from the bar’s own organic garden. Signature drinks like Aged Fruit are made using organic syrup created from avocado pits.
