Apéritif Restaurant is set to host an exclusive one-night-only dining experience, reuniting Executive Chef Nic Vanderbeeken with his former mentor, Chef David Selen of Restaurant Improviste in Belgium. This unique collaboration celebrates mentorship, creativity and the evolution of fine dining, presented through a carefully curated tasting menu that blends classical European techniques with contemporary innovation.
On Friday, 18 April 2025, from 5.30pm, the two chefs reunite, presenting a limited-time tasting menu that reflects their journey, from apprentice and mentor to equals, creating masterpieces in the art of haute cuisine. This dinner is priced at IDR2,500,000++ per person.
Chef Nic’s culinary story began in 2003, when he trained under Chef David’s expert guidance at his first Michelin-starred restaurant. There, he refined his skills under a chef known for his improvisational style and innovative approach.
Chef David, whose passion for cooking was ignited in his aunts’ village restaurant, built his career on creativity. He crafted ever-changing menus that celebrate fresh, seasonal ingredients. From an eager apprentice to a sous chef in prestigious kitchens, Chef David later established his own celebrated restaurants, continuously driven by a desire to surprise and inspire. Now, two decades later, the two chefs reunite.
