Alila Villas Uluwatu will host a three-day culinary residency at CIRE with Michelin-starred Chef Stéphane Carrade from 15-17 January 2026. The programme brings the French chef’s cooking to Bali through a series of two degustation dinners and a chef-led brunch.
Chef Carrade comes from Gascony, a region in south-west France known for its agricultural produce and strong food traditions. His cooking reflects this background, with an emphasis on ingredients, seasonality, and respect for origin. Over the course of his career, he has worked across Europe, building his style through experience in different culinary settings. One of his most recognised roles was at Le Skiff Club, where he refined a cuisine based on terroir and precision. His work later earned two Michelin stars, marking him as a chef known for clarity of flavour and technique.
He describes his approach as cuisine d’auteur, where dishes are shaped by both technical discipline and personal judgement. Rather than fixed recipes, his menus often change in response to what is available, guided by the market and the season. This allows his cooking to remain flexible while staying rooted in its original influences.
During his residency at CIRE, this philosophy will be applied to local Indonesian ingredients. While the final menu will only be revealed during the event, the dishes are expected to combine elements of south-west French cooking with Balinese produce, including locally sourced seafood, sea salt, and chocolate from Kintamani.
Set on the cliffs of Uluwatu overlooking the Indian Ocean, CIRE provides a quiet setting for this limited programme. The residency offers guests the opportunity to experience Chef Carrade’s cooking in a new context.
