Against the glorious sun that is just starting to dip behind the glittering Indian Ocean, couples would be ushered to their special table by the resort’s infinity pool, offering undisturbed views of the horizon. That’s when the first out of seven courses would begin, a seafood-based amuse-bouche to ease diners into the atmosphere. The follow-up highlights foie gras, a nod to the indulgent nature of the dinner, before a warm mushroom dish leads into the third course.
The fourth course finds inspiration from the coastal backdrop, highlighting red snapper for something fresh and light as a precursor to the evening’s main attraction. Slow-cooked beef tenderloin becomes the star of the hearty entrée, a worthy pair to the alcoholic beverages that have been flowing freely the whole meal. Apropos of the quintessential Valentine’s Day tradition of giving chocolates, the Chocolate Sphere serves up a medley of strawberry sorbet, raspberry jelly, white chocolate caviar, and delicate chocolate cake for a romantic end to the night.
