A refined four-hands dining experience celebrating Indonesia’s rich culinary heritage through elevated regional flavours and modern presentation.

Padma Resort Legian will present a special evening celebrating the richness of Indonesian cuisine through The Nusantara Table, a one-night-only four-hands dining collaboration on Friday, 26 June 2026 at DONBIU Restaurant. The event brings together acclaimed Indonesian culinary figure Chef Theo Setyo and Padma Resort Legian’s Chef de Cuisine, Chef Arif Surya Priyanto.

Widely recognised for his mission to elevate Indonesian cuisine onto the international stage, Chef Theo Setyo is known for combining authentic regional flavours with a refined modern approach. During his visit to Bali, he will collaborate closely with Chef Arif to showcase Indonesia’s culinary heritage through an elevated buffet dining experience inspired by traditional recipes and local ingredients.

Chef Arif will present signature creations including Sapi Wagyu Maranggi, Royal Mangut Salmon, and Otak-Otak Bandeng, while Chef Theo will highlight several of his well-loved dishes such as Gulai Kambing, Bebek Bacem, and Ikan Kuah Arsik. Together, the chefs aim to honour Indonesia’s diverse culinary traditions while introducing contemporary presentation and techniques.

To complete the dining journey, guests can enjoy traditional Indonesian desserts including Klepon, alongside a selection of Balinese and Indonesian-inspired cocktails specially curated for the occasion.

Held from 6pm to 9.30pm, The Nusantara Table offers guests the opportunity to experience Indonesia’s culinary identity through the creativity and expertise of two respected chefs in an elegant resort setting.

Woodfire Mediterranean Meets the Archipelago

Continuing the celebration, SKAI Bar & Grill will host Woodfire Mediterranean Meets the Archipelago on Saturday, 27 June 2026, an elevated six-hands dining collaboration featuring Chef Samuel, Chef Theo Setyo, and Chef Manu Gultom.

Set against the beachfront atmosphere and sunset views of SKAI Bar & Grill, the evening combines Mediterranean woodfire cooking with the bold and vibrant flavours of the Indonesian archipelago. Designed around open-fire cooking and sharing-style dining, the experience highlights fresh seafood, premium Tajima beef, and dishes inspired by traditional Indonesian culinary techniques.

Chef Theo Setyo will bring his signature cooking style rooted in authentic Indonesian flavours and traditional pawon methods. One of the highlights of the evening includes his Remis Plecing, a unique creation combining fresh bulung seaweed with scallops. Chef Samuel Barus and Chef Manu Gultom will complement the menu with Mediterranean influences and expertly prepared Tajima beef selections cooked over woodfire.

Guests will begin the evening with a welcome drink and pass-around canapés from 5pm to 6pm while mingling with the chefs before continuing to the dinner experience. Chef Manu shared his excitement about the collaboration, describing it as a creative exchange between chefs with distinct culinary identities and experiences.

As the first-ever six-hands dinner hosted at SKAI Bar & Grill, the event promises a memorable culinary experience that celebrates creativity, premium ingredients, and the meeting point between Mediterranean cuisine and Indonesian flavours.
