The cave by Chef Ryan Clift presents its latest tasting menu, an extraordinary experience set within a breathtaking subterranean setting. Continuing to redefine modern gastronomy, the new menu blends global influences with the rich flavours and traditions of Bali.

Created by Head Chef Nikhil Sengupta under the visionary direction of Chef Ryan Clift, the ten-course tasting menu takes guests on an immersive exploration of taste, texture, and storytelling. Each dish is crafted to surprise and delight, evoking emotion with every bite.

“It’s an honour to present my very first menu at The cave,” said Chef Nikhil Sengupta. “My inspiration draws from the world’s diverse cuisines and the spirit of Bali itself. Each course is more than a dish, it’s an experience that lingers long after the last taste.”

Menu highlights include Crab Taco with enoki mushroom and sour starfruit, and Tournedos Rossini, a decadent fusion of steak tartare, foie gras, bone marrow, truffle, and egg yolk. Lawar Plek pays homage to Balinese heritage with tuna ceviche, bumbu Bali, and coconut rice, while Foie Gras Cannoli and Scallops & Watercress showcase refined artistry on the plate.

After a brief intermission, diners are treated to exquisite creations such as Ocean Trout Bouillabaisse, Smoked Lamb with Cauliflower, and indulgent desserts including Rock Melon Cocktail and a reimagined Mango Sticky Rice.
