Finally opening its doors after quite long anticipation, The Apurva Kempinski Bali has proven that it was definitely worth the wait. Putting exquisitely enticing Indonesian culture and heritage at the core, the hotel presents the concept in an elegant and majestic way, evoking oohs and ahs. The Apurva Kempinski Bali is determined not to play out anything half-heartedly; everything the resort brings is its A game, including its dining destination – with the first aquarium restaurant dining experience on the way.

At the heart of the resort’s extravagant courtyard is Pala Restaurant & Rooftop Bar. Surrounded by the massive swimming pool, pond and tropical garden, the restaurant offers an enchanting venue to enjoy good food and drinks. With floor-to-ceiling windows all around, diners get to enjoy the feeling of being outside, while still in the comfort of an air-conditioned room. The centrepiece is the live-cooking stations, offering an extensive and delectable array of tasty local and international fare – providing a great feast both for the palate and the eyes.

The food menu carries light and refreshing bites – like the classic Caesar salad and ceviche, and also hearty meals, like sandwich, pizza and pasta selections. Favourite Asian dishes, like maki roll and sushi, tempura, Malaysian char kway teow and gong bao ji ding are also available to satiate diners’ Asian cravings.

Not to be missed are the Indonesian dishes, a preview of the country’s rich and flavourful gastronomy. Popular Indonesian comfort food nasi goreng is enhanced with wagyu beef, while the soto ayam is truly food for the soul. The mie goreng Jawa and Lombok-style ikan bakar sambal plecing are more than worth tasting.

Fruit Platter

The dessert section showcases delightful delicacies for the sweet-toothed, from western creations to local favourites. Apurva’s tiramisu is made using local luwak coffee, while the es teler, dadar gulung and pisang goreng are reminiscent of homemade snacks in Indonesian homes.

When it nears the golden sunset hour, head to the second floor of Pala for the rooftop bar. The bar and lounge provide an elevated vantage point from which to enjoy the divine ocean view and to really bask in an unrivalled atmosphere. Complete the experience by ordering the signature cocktails and get ready to lose track of time.
