E: Hi Julian, what’s been happening since the last time we talked?

A: We have finally launched our new menu back in February. Thus far, we have received a positive response and great feedback from our guests. This menu offers something unique that they have not experienced at Nautilus Bar before. 

E: Now that it’s out, can you tell us more about it?

A: So our new menu is based on the spice trade in Jakarta’s Sunda Kelapa sea port between the 17th to the 19th century. Our main focus with the menu is to showcase the ingredients that were most sought-after during those times, and incorporate them into our new cocktails. These ingredients include pepper, pandan, cinnamon and nutmeg.

E: Is there any plan for more creations with similar theme?

A: Yes, after one quarter, we are currently already working on our next menu, which will launch next year, likely in the early part of the year. It will follow a similar concept, with the spice trade being the main inspiration. However, it’s a work in progress, and we are looking to spice things up.

E: Other than the menu and cool, new uniforms, are there other changes in Nautilus – maybe concept wise?

A: Some of our new features include some cool collaterals we have, such as new coasters, cocktail napkins, our chinaware and a fully stocked back shelf with fantastic spirits.

E: What’s next for Nautilus, are there any exciting plans in the pipeline for the future?

A: We are looking to create a more fun environment. This includes our plans to do some more takeovers with our friendship series over the next couple of months and all the way through next year. We might throw in some special nights, but that’s also still a work in progress for now. Just stay tuned and drop by often so you won’t miss anything.

E: What do you think about the bar and mixology scene in Jakarta right now? 

A : From what I have observed, the current bar scene in Jakarta has evolved since I arrived last year. Customers are now more focused on enjoying great drinks and being around good company and friends. The rise of cocktail bars and excellent drinks is something great to see in this metropolitan city.

E: Now that you’ve been in Jakarta for a while, can you share with us what’s your favourite activities outside of work?

A: Oh wow, this is a great question. I, for one, am pretty relaxed on my days off. I like to watch Netflix or stream some movies, order a nice meal, have it in the comfort of my home, and then maybe go out late at night to visit some bars. I like to enjoy some drinks and music – meet up with some friends. If I’m feeling a bit more energetic, I’d normally go for a run around my neighbourhood. Other than that, I’m basically a couch potato when I’m off.
