Nusantara by Locavore was born from the brilliant brains behind the much sought-after dining destination in Bali’s Ubud, Locavore. Respected chefs/restaurateurs Eelke Plasmeijer and Ray Adriansyah are back with Nusantara to showcase the rich world of Indonesian cuisine. The name itself means archipelago in Indonesian, basically summing up the dining experience at this restaurant.

Helmed by Chef Putu, who has been part of the Locavore team from the get-go, the Nusantara team brings together the freshest local produce, seasonal ingredients and ethical meats to create elevated takes on authentic Indonesian dishes using artisanal recipes. The team also aims to bring authentic, less-popular regional dishes to food enthusiasts’ attention to get the recognition and respect they deserve.

The menu is quite extensive, with selections of small dishes, bigger dishes, rice dishes and vegetable dishes. It even has a dedicated section for sambal in true Indonesian culinary fashion.

Some of the favourites from the small dish selection include gohu, a dish from Maluku comprising raw fish marinated with lime juice, shallots, chillies and kemangi leaves. Another favourite is the dendeng batokok from West Sumatra; the goat leg is marinated with coconut water and coriander, and grilled over woodfire.

The bigger dishes are too appetising to miss, with highlights including bebek tanah from Payangan, Bali – whole Balinese sawah duck slow-cooked in clay with bumbu rajang and cassava leaves, and rabeg kambing from Banten, West Java – goat ribs with chillies, shallots, garlic, turmeric, galangal, palm sugar, kecap manis and coriander, slow-cooked in a traditional claypot over a wood fire.
