Ikan Restaurant & Bar at The Westin Resort Nusa Dua, Bali continues its culinary journey across Indonesia with the second chapter of Travelogues of the Archipelago, bringing the bold flavours and rich heritage of Minangkabau cuisine to Bali.
Indonesian cuisine is always enchanting. Its magnetism never fades; its rich, spice-laden flavours captivate the palates of international travellers. Ikan Restaurant & Bar at The Westin Resort Nusa Dua, Bali, is reviving these diverse flavours through the second chapter of their culinary storytelling series, Travelogues of the Archipelago. This event invites guests on a journey through culinary traditions passed down through generations. Taking place on 21 and 22 August 2026, this gastronomic voyage will highlight traditional Minangkabau cuisine, curated by guest chef Fernando Sindu from Salira, Jakarta and in collaboration with chef Mohamad Raviel Sidik, Head Chef of Ikan Restaurant & Bar.
Turning the spotlight towards West Sumatra, this chapter explores a cuisine defined by aromatic spices, slow-cooked techniques, and generations-old recipes. Chef Fernando, affectionately known as Nando, brings a culinary perspective shaped by his international experience and extensive travels across Indonesia. A graduate of the Culinary Institute of America, he refined his craft in New York before returning home to lead Salira Jakarta, The Union Group’s first restaurant dedicated entirely to Indonesian cuisine.
Working alongside Chef Raviel, whose cooking is rooted in Indonesia’s coastal heritage, the duo presents a specially curated à la carte menu that bridges tradition with a contemporary sensibility. Among the featured creations are Kaleo Domba Muda, Ikan Bakar with Asam Padeh Sauce, the Rendang Series, Itiak Lado Mudo Bukittinggi and Udang Bakar Pariaman.
More than a dining experience, Travelogues of the Archipelago is an exploration of Indonesia’s culinary identity, with each chapter revealing the traditions and stories behind a different region. Set against panoramic ocean views at Ikan Restaurant & Bar, the second chapter offers an evocative meeting of West Sumatra’s culinary heritage and Bali’s southern coastline.
