Beverage Manager at The Westin Resort Nusa Dua, Bali
E: What are your responsibilities?
A: As Beverage Manager, I oversee the entire beverage strategy across all outlets, from concept development and menu engineering to cost optimisation, supplier partnerships and team development. My role is to ensure that every beverage experience reflects Westin’s brand commitment to wellness and premium hospitality, while ensuring the programme is both inspiring and strategically sound. Beyond operations, I focus on mentoring the bar team, nurturing creativity, refining technical skills and elevating service standards to consistently exceed guest expectations.
E: What makes a typical day?
A: In hospitality, no two days are ever the same, and that’s the beauty of it. My mornings often begin with reviewing performance figures and aligning with the team on the day’s priorities. As the day unfolds, I might be experimenting with new flavour combinations, meeting suppliers or conducting training sessions to sharpen technique and creativity. By evening, I prefer to be on the floor, observing, connecting with guests and supporting the team, making sure every cocktail leaving the bar feels intentional and well-crafted.
E: Your best attribute?
A: Clarity in creativity. I enjoy pushing boundaries, but always with purpose. A great beverage programme should feel inspiring to the guest while remaining sustainable for the business. Balancing those two aspects is something I value deeply.
E: Team player or team leader?
A: A team leader who believes strongly in collaboration. For me, leadership is about empowerment, building trust, encouraging growth and leading by example. I believe in setting direction when needed, but also creating space for others to shine. When people feel trusted and supported, they naturally elevate their performance.

E: Who has been the most influential figure in your career to date?
A: My journey itself. Every setback has sharpened me, and every achievement has reminded me to stay humble. Growth, in my view, comes from being willing to learn continuously and adapt without losing your core values.
E: Name one really special thing about your bar?
A: Our bar carries a strong sense of identity. We take flavours that are deeply rooted in Indonesia, such as arak, temulawak, local spices and tropical herbs, then reinterpret them using contemporary techniques and refined balance. The goal is not to reinvent tradition, but to present it in a way that feels elegant and relevant. There’s something powerful about watching a guest discover a familiar ingredient in an unexpected form. That pause, that curiosity, that’s where the experience becomes personal. In that moment, it’s more than just a cocktail; it’s a subtle introduction to Indonesia’s story, told through craftsmanship and detail.
E: How do you unwind?
A: I recharge by exploring new places, particularly destinations that feel unfamiliar and spontaneous. Experiencing different cultures and flavours often sparks fresh ideas. I also value time with close friends; good conversation has a way of resetting perspective.
E: Dead or alive, who would you like to take out to dinner?
A: My father. He has always been my quiet foundation. Sharing a meaningful dinner with him would be less about the setting and more about the conversation, a moment of gratitude and reflection.
