Two of Bali’s most distinguished Japanese dining destinations, Tsune Japanese Restaurant and Hamabe Japanese Restaurant, come together for an exclusive four-hands collaboration celebrating the artistry of Japanese craftsmanship. Bringing together contemporary creativity and time-honoured culinary traditions, the collaboration offers a rare exploration of refined Japanese gastronomy through a thoughtfully curated multi-course experience.
Representing Tsune is Chef Tia, known for her precise and contemporary approach to Japanese cuisine, shaped by the dynamic theatre of teppanyaki. Under her direction, Tsune has earned international acclaim, including recognition at the World Luxury Restaurant Awards 2025. Joining her is Chef Felix Ieryandi of Hamabe, whose culinary journey includes a distinguished tenure at Nobu Dubai, and whose mastery of robatayaki and classic Japanese techniques is widely respected.
The collaboration unfolds across two exclusive dining events: first at Tsune in Sanur on 26–27 June 2026, followed by Hamabe at The Westin Resort Nusa Dua Bali on 10–11 July 2026. Each venue offers its own distinctive atmosphere, while showcasing the unique strengths of both chefs in a harmonious culinary dialogue.
The menu is a seamless exchange of flavours and techniques. Tsune presents dishes such as Hamachi Carpaccio, Japanese Scallops, Spicy Tempura Maki, Salmon Skewer, and Flathead Lobster, while Hamabe contributes Sumatra Snapper Tiradito, Black Cod Miso, Wood Fire Eggplant, and Pork Chop Houbaya-yaki. Premium nigiri and sashimi selections, featuring Lean Tuna, Hokkaido Scallops, Alaskan Snow Crab, Osaka Smoked Eel, and Tasmanian Salmon, complete this elevated journey, an elegant celebration of tradition, innovation, and exceptional craftsmanship.
