This August, Masonry joins W Bali – Seminyak’s Sunday Brunch at Starfish Bloo, bringing its signature fire-led cooking and Mediterranean-inspired flavours to an afternoon by the sea.
The art of cooking over fire takes centre stage this August as Masonry joins W Bali – Seminyak’s Sunday Brunch Series for a one-day culinary collaboration at Starfish Bloo. Taking place on 30 August 2026, the collaboration brings Masonry’s distinctive wood-fired approach to Seminyak, pairing bold Mediterranean-inspired flavours with the vibrant energy of W Bali’s signature Sunday brunch.
At the heart of the collaboration is a selection of Masonry favourites that celebrate quality ingredients and thoughtful cooking. Guests can look forward to Whole Rolled Pork Loin, served with vibrant green harissa and pickled onion, alongside Roasted Barramundi Fillet with Sauce Grenobloise, where burnt butter, capers, herbs, lemon, and croutons bring depth and brightness to the dish.
Adding a lighter touch is the Watermelon Salad, combining juicy watermelon with Persian feta, black olive, roasted onion and basil. Completing the selection is a comforting Potato Gratin, elevated with caramelised fennel and cheddar. Together, the dishes showcase Masonry’s relaxed yet considered interpretation of Mediterranean cooking, with fire and quality produce at its core.
Leading Masonry’s culinary direction is Group Head Chef Simon Polkinghorne, whose career spans more than two decades across some of Melbourne’s respected kitchens. With a foundation in fine dining and classic technique, he brings an ingredient-led philosophy to Masonry, combining premium produce with thoughtful, from-scratch cooking.
