Perched high above the capital on the 63rd floor, Morimoto Jakarta introduces a sushi omakase experience that plays with expectations while honouring deep-rooted Japanese tradition. Beginning 15 July 2025, the 14-course Chef’s Table: Omakase is presented under the careful hands of Executive Japanese Chef Juntaro Fujimura. Known for his sharp attention to seasonality and detail, Chef Juntaro brings over 20 years of experience from Tokyo and Kyoto to this elevated dining experience.
Guests are welcomed with views of Jakarta’s skyline as the first course arrives — Foagura Chawanmushi. The silky custard, softly layered with foie gras and umadashi, sets a calming, savoury tone. This is followed by a sashimi selection curated daily, where every slice reflects freshness and clean execution.
As the pace of the meal builds, the Arasuka Taraba Kani makes a statement. Alaskan king crab is lightly fried and plated with amazu and ponzu, its crisp texture paired with truffle-scented soba for added depth. The Amadai Uroko Yaki, featuring scale-grilled tilefish, brings a satisfying crunch, balanced by warm dashi and shiitake.
Then comes the centrepiece, Miyazaki Wagyu Robata Yaki. Grilled over hot robata, the A5 striploin is rich yet precise, matched with shishito and a wasabi pepper sauce. The sushi course soon follows, with six seasonal pieces, each distinct yet connected in harmony.
To close, a comforting red miso soup leads to Kanmi, a chilled dessert of mango mochi, coconut crumble and passionfruit, rounding off the experience with a burst of freshness. The omakase is priced at IDR2,988,000++ per person, with optional beverage pairings. The alcohol pairing highlights sake and Japanese gin cocktails, while the non-alcohol version features flavourful blends like smoked oolong with plum or shiso-infused apple.
