The Ritz-Carlton, Millenia Singapore, one of the higher-end hotels in Singapore, is delighted to present its newest dining concept: Colony. Brunching at Colony, which has a capacity of 260, guests are promised a cosy and unforgettable dining experience as they embark on a culinary journey through Singapore’s heritage cuisines.

The restaurant has eight conservatory kitchens, which feature different cooking techniques. For instance, The Wok serves Singaporean wok-fried delicacies such as seafood fried rice with XO sauce, while The Grill & Rotisserie serves a delectable selection of Western and Asian meats that are perfectly grilled. Asian noodles, soups and other steamed delights can be found at The Steam Basket, whereas Indian cuisine can be found at The Tandoor. Seafood lovers can go directly to The Ice Bar and enjoy the poached live prawns, king crab legs, and much more. What makes brunching at Colony more exciting is the live culinary showmanship boasting the best of Chinese, Indonesian, Western, Malaysian, Indian and local delicacies that will provide diners with the ultimate brunch experience.

Diners can enjoy unlimited servings at the conservatory kitchens during an extensive Vintage Champagne Brunch at Colony, which is available every Sunday from 12PM to 3.30PM.

Located on level three of the luxury hotel, Colony, which was officially opened on 23rd September 2015, features an eclectic mix of vintage and bespoke furniture featuring tartan and houndstooth prints that showcase British-colonial elegance. At Colony, diners can also peruse old maps, photographs and postcards adorning the restaurant’s walls and partitions, which will bring them back to a bygone era.
