Rumari at Raffles Bali: A Culinary Journey with Krug x Lemon

An extraordinary gastronomic journey in a celestial setting at Rumari, Raffles Bali.

Indonesia’s first and only Krug Ambassade, Rumari at Raffles Bali, is a haven for lovers of exquisite cuisine and fine champagne. As part of the prestigious global network of Krug Ambassades, Rumari shares a deep-rooted commitment to quality and the maverick spirit of Joseph Krug, the visionary founder of the House of Krug.

“More than places, Krug Ambassades are the faces of Krug Lovers around the world: Chefs, sommeliers and partners with whom we have a privileged relationship,” says Manuel Reman, President of the House of Krug.

The House of Krug, established in 1843 by Joseph Krug in Reims, France, has a unique plot-by-plot approach to winemaking. Each vineyard plot is treated as an individual ingredient, and the art lies in understanding that each plot contributes to the creation of Krug Champagnes. To celebrate this craftsmanship, the House annually honours a single ingredient from the culinary world, inviting Krug Ambassade chefs to unleash their creativity by crafting innovative recipes to pair with Krug Champagnes.

This year, the chosen ingredient is the vibrant lemon, and to mark this occasion, Rumari at Raffles Bali hosted a remarkable Krug x Lemon dinner on 28 July 2023. Executive Chef Gaetan Biesuz, who has a strong bond with Krug and previously participated in the annual Voyage des Ambassades in Naples, Italy, showcased the versatility of lemon in a menu of fine contemporary Indonesian cuisine.

The exclusive menu featured delightful dishes like fish accra with lemon aioli, lobster tortellini with lemon sauce, lamb shoulder with lemon confit, lemon baked Alaska, and more. Each dish was carefully crafted to complement the distinct flavours of Krug Champagnes, enhancing the dining experience for guests.

The setting at Raffles Bali is nothing short of magical. Situated on the highest point of the resort, Rumari offers breathtaking views of Jimbaran Bay, creating a celestial backdrop for a memorable culinary journey.

The House of Krug stands apart from other champagne producers by offering seven different Champagnes, each representing a distinct expression of nature. Joseph Krug’s unwavering philosophy was to craft the best Champagne possible each year, regardless of climate variations. This led him to create Champagnes of the same level of distinction, going beyond the notion of vintage.

Being an official Krug Ambassade, Rumari at Raffles Bali not only represents the House of Krug but also embodies the essence of Krug Lovers around the world. These Ambassades, spanning across 40 countries, enjoy a privileged relationship with the House, being cherished partners, chefs, and sommeliers who share the same passion for Krug Champagnes.
