The restaurant was founded by two childhood friends who wanted to create a space where their diverse backgrounds and ambitions could meet at the table. Their Romanian roots and Italian influences merge through carefully selected ingredients and a deep respect for tradition. The name CÁRNE, which means meat in Latin, emphasises its devotion to quality cuts, particularly the dry-aged beef that has become the hallmark of the restaurant.
The restaurant has quickly earned a place among Jakarta’s best Italian-inspired restaurants, celebrated for blending tradition with modern flair. While recognised as one of the first to introduce dry-aged meats to the city, its appeal reaches far beyond. Guests can try its prime tartare, a starter defined by clean flavours, before moving to Linguine al Granchio Nero, where squid-ink pasta and butter-poached crab capture the essence of Italy’s coastline. At the centre of the table, the bistecca alla fiorentina delivers a Tuscan classic marked by fire and character.
