Yugen Shabu & Sukiyaki introduces a festive set menu that stays close to its core identity: Japanese hot pot dining with quality ingredients. Designed for the year-end season, the menu offers a complete course sequence that is suitable for shared meals without adding unnecessary complexity.
The set begins with Sakizuke, featuring Nori Cracker with King Crab Tartare, a light starter that combines crisp texture with clean seafood flavours. This is followed by Zensai, a Baked Tomato Salad that adds mild acidity and freshness before moving into warmer dishes.
For the hot pot section, guests are served Wan Garari: Kagoshima Gyu Shabu Shabu, which highlights premium Kagoshima beef sliced thin for quick cooking in a clear broth. The meat is paired with vegetables to keep the balance light and focused on natural flavours. Alongside this, Kuchi Gawari: Truffle Somen on Ice is presented as a palate refresher, offering a cold noodle dish with subtle truffle notes.
Additional courses include Aizakana: Grilled Salmon Roll, providing a cooked seafood option, and Hashi Yasume: Uni Chawanmushi, a steamed egg custard enriched with sea urchin for a smooth, savoury profile. These dishes are served in moderate portions, keeping the overall pace of the meal comfortable.
Towards the end, Shiizakana: Baby Chick Truffle introduces a richer flavour element, followed by Okashi: Fruits Rare Cheesecake as dessert. The cheesecake is kept light, offering a clean finish to the set.
