In June 2025, Koral Restaurant welcomed Chef Jonas Noël as its new Executive Chef, bringing over 20 years of experience from MICHELIN-starred and five-star kitchens across Europe and Asia. Under his leadership, he brings a Signature menu that unfolds across seven or eight courses, each paired optionally with selected wines. Dishes such as Kalimantan Blue Crab with Oscietra caviar and apple, Hokkaido scallop with fregola sarda and clams, and Papua bamboo lobster with shellfish jus reflect a dialogue between Indonesian coastal flavours and European technique.
Further courses celebrate the archipelago’s bounty: Sumbawa octopus tentacle layered with smoked aubergine and pine nut, Madura line-caught fish with coconut and kaffir leaf, and free-range guinea fowl accompanied by mushrooms and Pomerol wine pairing. The experience concludes on a distinctly local note, with Harum Manis mango and Mount Batukaru coffee crafted into otherworldly desserts.
