Inspired by the traditional home cooked food of South East Asia, LILIN at Bali’s legendary Potato Head Beach Club takes authentic ingredients from the Orient and prepares them in the chef’s own contemporary style. Asian cuisine is often perceived as exotic bursts of heat and activity, but at LILIN that notion is taken down a notch to instead capture the comfort and vibrant flavours of the islands. Illustrating this to culinary perfection is the Asian Chili Crab from the restaurant’s live seafood selection. Chef Gede took inspiration from Singapore’s signature chili crab but felt there was something missing. So, he added the aromatic Balinese spices of galangal, ginger and local chili. Most seafood dishes are all about the ocean catch itself, yet this dish is all about the sauce. Fragrant, intricate and finished with a perfect kick, the sauce undoubtedly steals the show. And it is best enjoyed when lathered onto the silky smooth mantau buns that are served with the dish and washed down with their Asian “Lintang Sangria”.
