E: Describe your typical day in a sentence.
Alex: Hit the ground running.
E: So how did you come to be the Food & Beverage manager for The Seminyak Beach Resort & Spa?
A: I’m here because of my passion for food and beverage, not to mention guests’ satisfaction, a unique opportunity and a property with loads of potential putting together the ideal dream team.
E: What’s the toughest part of your job?
A: To please everybody involved in it.
E: And what makes you smile at work?
A: Great feedback on our performance.
E: What motivates you?
A: The ability to excel from the present time and influence people.
E: Would things fall apart if you weren’t around?
A: I hope not! [laughs] Clear instructions and experience should cover it.
E: Who, in your team, deserves more recognition and why?
A: Perhaps my admin, she is just like a silent sniper. And of course the staff around our infinity poolside as it’s hard work being under the sun all day along running up and down always smiling.
E: Why should people visit The Seminyak Beach Resort & Spa to dine/stay?
A: Well, multiple reasons since you’ve asked. The infinity pool would be my pick to gaze at the great Indian Ocean while sipping a TiKi or retro cocktail. Sanje (Balinese for dusk), on the other hand, with its Mediterranean menu featuring merengue base and rock salt oven-baked crusted snapper is hard to beat. Now the resort itself is a hidden gem in the heart of Seminyak with a real Balinese feel to it, superb rooms and private villas, and not to mention if you’re going to seal the deal then we’ve got the best and perhaps only chapel in the area that’s absolutely beach front.
E: Away from work, what’s your favourite place to eat?
A: So many good places to choose from these days. For Sunday it’s Sundara’s brunch, Monday jazz at Ryoshi, for Tuesday is taco and tequila at Laca Laca, Jemme’s roast on Wednesday, Kilo on Thursday, Mama San on Friday and Cafe Marzanos on Saturday.
E: How do you unwind?
A: Exercising by either surfing, swimming, running etc.
E: Finally, any advice for those looking to break into the industry?
A: Yes. Be reliable, open minded, able to break things down and change aspects that need innovation while continuing others that work well and follow up to ensure it gets done.
