Much has changed since the Balinese outpost of Spanish hotel chain Meliá reopened as Paradisus by Meliá Bali in February 2026. It marked the brand’s arrival in Asia, bringing along its hallmark all-inclusive luxury experience rooted in local culture. Among its latest upgrades is Arum Asian Restaurant, an immersive dining experience that blends authentic, regional flavours with the island’s traditional heritage.
Its arrival ushered in a makeover of the bale-like structure that once was a Southeast Asian restaurant. The space offers little to no separation between the indoors and outdoors, allowing diners to fully enjoy the tropical paradise just beyond the restaurant’s grand, carved wood entrance. One of the most impressive upgrades, however, can be witnessed by simply looking up. The high ceilings have been repainted with a striking mural of patra motifs swirling against a vibrant royal blue.
The menu is led by Pan-Asian fare, spanning Indonesian, Vietnamese, and Thai specialities. Simple and familiar dishes are refined with high-quality and luxurious ingredients, such as the Bone Marrow Pho and Revisited Rawon. Southeast Asian fusions also find a home among Arum’s offerings, such as the Singaporean Grouper Laksa and Hainan Chicken Rice.
There’s no hurry to leave as cocktails inspired by Balinese and Thai flavours invite diners to prolong their dinners. But the true reason to remain seated is the daily traditional live music and dance performances that add a theatrical flair to every visit. It creates an atmosphere that doesn’t hurry guests through courses, instead inviting them to slow down and sink into the relaxation of dining with each bite.
