Eco-Conscious Dining at COMO Hotels and Resorts in Bali

COMO Beach Club and Uma Cucina participate in the Bali Hotel Association Sustainable Food Festival 2021.

Two COMO Hotels and Resorts properties in Bali – COMO Uma Canggu and COMO Uma Ubud, are joining the first Bali Hotel Association Sustainable Food Festival that will be held from 27 September until 16 October 2021.

This festival allows COMO Beach Club at COMO Uma Canggu and Uma Cucina at COMO Uma Ubud to showcase the innovative work they have been creating to shift to a more sustainable way of operating.

While programs such as single use plastic reduction are already well established, both food and beverage outlets are preparing a special two-course set menu featuring Indonesian food at COMO Beach Club and Italian treats at Uma Cucina to be devoured during this period. The menus adhere to following key sustainability criteria, such as using ingredients only sourced from Indonesia, encouraging a minimum of 75 percent organically grown items, respecting fair trade principles, using certified sustainable seafood and free range poultry.

The festival also aims at reducing waste to as close to zero as possible, encouraging waste reduction activities such as composting and waste separation to facilitate recycling. These initiatives are intended to set a benchmark for the future, implemented across all operational areas beyond the festival period.

COMO Beach Club, the oceanside setting at COMO Uma Canggu, offers a modern take on the traditional surf shack. Fresh, regional ingredients drive a simple, modern approach in the kitchen where there is an authentic wood-fired grill. For this event, the culinary team of COMO Beach Club has prepared a delicious two-course sharing set menu of traditional Indonesian delicacies, like Ikan Kerapu Goreng (crispy fried whole grouper, fried garlic, ginger and shallot with spicy sweet and sour sauce) followed by Dadar Gulung (pandan crepes with caramelized coconut and banana with coconut sorbet) as the sweet ending for IDR180,000++ per person.

Meanwhile Uma Cucina, the Italian-inspired restaurant and lounge at COMO Uma Ubud, offers an informal and convivial setting of outdoor terraces and indoor dining that reflects the homely kitchen spirit behind its name. Uma Cucina is offering a two-course set menu featuring tantalizing Tagliatelle Ai Gamberi (hand-cut tagliatelle, prawns, zucchini, cherry tomatoes and parsley) and Tartlet (lemon ricotta with vincotto glazed strawberries) at IDR200,000 net per person.

Both COMO Beach Club’s exquisite beachfront setting and Ubud at Uma Cucina’s rustic outlet have special prices for paired Balinese wines.
