SIKI unveils the most recent addition to its portfolio, KALIH by SIKI, a Cocktail Lab and Research & Development Room dedicated to fostering an intimate atmosphere and earnest dialogues around mixology based on Japanese and Balinese spirits.
If one seeks a night filled with conventional cocktails and rapturous music, there are plenty of options for that in Bali. KALIH by SIKI, however, offers a different scene, one that is more understated and unorthodox. Billed as a Cocktail Lab and Research & Development Room, this experimental space draws from SIKI’s proclivity for blending Japanese and Balinese influences, demonstrated through the lineup of star spirits.
For its debut chapter, the most discerning drinkers are invited to experience Balinese arak in a different way. The mixology team uses the island’s traditional distilled spirit as a blank canvas for experimentation through infusion, distillation, and flavour development.
The best (and only) way to taste these whimsies is with The Cocktail Lab Experience. In lieu of a menu, the drinking experience here begins with a conversation. Upon revelation of one’s mood, preferred spirit, and palate, the mixologists concoct a bespoke cocktail using house infusions, experimental distillations, and techniques, promising a journey that feels personal and intimate. Guests can also get a hands-on, more in-depth look into the process with an Arak Workshop every Wednesday to Sunday.
With only 16 seats available, the ambience maintains a sense of atmospheric calm, allowing patrons to quickly pick up on the subtler details that shape the venue’s identity. It’s easy to see how KALIH studies, questions, and reinterprets mixology with all its experimentation and guest-centred exchange. And, with a second chapter slated to explore sake in the horizon, this experimental playground will continue to expand its repertoire and demonstrate how mixology interacts with people, culture, and hospitality in a meaningful, novel, and experiential way.
