Viceroy Bali’s CasCades Restaurant brings together William Wongso, Jovan Koraag, and its Executive Chef, Gerry Nainggolan, three celebrated culinary masters who bring their distinct perspectives into a limited one-night only dining experience, Table of Three.
According to an English proverb, too many cooks in the kitchen spoil the broth. But for CasCades Restaurant, three is the magic number, as the signature restaurant at Viceroy Bali brings together William Wongso, Jovan Koraag, and Gerry Nainggolan for a special collaborative dinner. The three national culinary icons are joining hands for a Table of Three exclusively on 2 May 2026, each infusing their distinct cooking styles into the evening’s menu.
Chef William Wongso needs no introduction. His penchant for preserving Indonesia’s culinary heritage remains a consistent tenet across decades of his career, and his participation at Table of Three is no different. Alongside signatures like Rendang Beef Cheek and Sate Babi Maranggi, he unveils an elusive archival dish once reserved for royals and historic figures, presented in a never-before-seen interpretation. He has also collaborated with the other two chefs to whip up joint creations, like the Milu & Asam Udeung with Chef Jovan Koraag.
Known for his bold expression of Indonesian food, Chef Jovan brings an interplay of fermentation and fire from his restaurant, Mata Karanjang. His creations for this menu infuse a modern energy into traditional dishes, serving up the Fruity Gohu, Tuna Belly Rica-Rica, and Woku Ayam Sayur Pangi. CasCade’s Executive Chef Gerry Nainggolan posits the opposite: something more understated but still unfolds with depth and character. This refined technique is revealed through his courses, such as Palu Mara Ikan, Emping Rujak Mangga, and Nasi Bakar Teri Wangi Rempah.
Beyond dining, the evening serves as a way for Viceroy Bali to empower local communities. Table of Three also benefits Yayasan Cahaya Mutiara Ubud, a local disability community foundation. Their presence can be felt throughout the dinner, from the warm welcome with a Rindik performance to the traditional paintings exhibited throughout the restaurant.
