Adriana Cocina & Bar makes it clear it’s not just about the popularised facets like tacos and tequila (although if one were to order those from Adriana’s menu, they would be pleasantly satisfied). Here, it’s also about the vibrant culture, its amorous underpinnings, and the people’s high spirits and love of communal dining and drinking.
The ambience makes this clear upon arrival at this open-air bar and restaurant, washed in vibrant orange and pink swatches that evoke the flamboyant parades that frequently flood the streets of Mexico. But, in case guests need a reminder where they are, simply gaze westward, and they would find the stretch of coast and ocean waters that Jimbaran Bay is famed for. It would be hard to miss the panoramic view from this high up, as Adriana sits atop the eighth-floor rooftop of Samasta Lifestyle Village.
Post-sundown neon lights come on as a cue that it’s cocktail hour. In an ode to Mexico’s tequila-making heritage, one section of the drink menu is dedicated to the spirit. Familiar selections such as margarita and paloma appear alongside unique creations like Michelada, a medley of tequila, beer, clear tomato, and a house-special seasoning. It makes for some potent spicy liquid courage that would be more than enough encouragement to join in on the salsa nights every Thursday. The signatures also draw from the characterful identity of Mexican culture, like Summer with Adriana, which upgrades the pisco sour with light rum, basil oil, and mango, or Adriana’s Kiss that blends pisco with strawberry Aperol and chardonnay.
If it feels too early for cocktails, settle into one of the dining spaces and enjoy non-alcoholic drinks that pay homage to the culinary traditions of Mexico. Sip on some Tepache, a fermented pineapple-based drink, or indulge in a cinnamon-tinted, creamy Horchata. Complementing the drinks is a diverse lineup of dishes, from tacos and quesadillas to fajitas, carne asada, and seafood skewers.
