Since opening in 2022, Bonito has been delighting Bali’s tastemakers with flavours of the Italian coast at its dining room in Umalas. While it has closed the doors to its former home, the restaurant finds its new address as it takes residency on the rooftop of KLEO Seminyak, part of JdV by Hyatt.
Patrons can find the same flavours and dishes that have long defined Bonito’s culinary identity. Finding inspiration from the kitchens in his hometown of Puglia, Chef-Owner Maurizio Bombini serves up seafood, house-made pasta, and signatures that present the best of land and sea.
The menu moves from the ocean outward: raw and blanched specialties, perfectly grilled fish, crispy fritto misto, and handmade pasta such as Bottoni Cacio e Pepe and Gnocchetti al Ragù. Meat and vegetarian dishes are on hand too, alongside wine and cocktails for slow evenings.
