The innovative concept behind Ambar is the result of a collaboration with Singapore-based Proof Creative, an award-winning hospitality consultancy. Known for its expertise in the second golden age of fine drinking, Proof Creative has anchored Ambar’s offerings at the intersection of Balinese ingredients and Japanese culinary techniques.
Head Mixologist Adi San has created a menu at Ambar that exemplifies creativity and melting pot culture. The Taru Pramana menu is a representation of health and tradition, and it was inspired by Lontar Taru Pramana, an essential aspect of Balinese culture.
Ubud’s history as a hub for traditional medicine is reflected in the name derived from Ubad, meaning medicine in Balinese. The Taru Pramana menu not only preserves this heritage but also promotes biodiversity by encouraging the use of medicinal plants. Each cocktail in the Taru Pramana collection is meticulously crafted to offer a unique blend of wellness and indulgence. The Ubud Prince presents an aromatic blend featuring ginger, offering a warm and invigorating experience. My Grandma, a tribute to the tradition of Nginang, incorporates betel leaves for a touch of heritage, while Temu Memories, fortified with temulawak, supports the immune system with a refreshing taste.
