Chef Marx himself is a veteran with 30 years of wisdom and knowledge that includes working in Michelin-starred restaurants all over France. He designed his ever-evolving creations based on finding the best produce and preparing it with respect, while keeping tradition alive by utilising classic and modern French techniques.

The menu at Amuz changes from time to time, depending on the availability of fresh seasonal produce from the best markets around the world. At the time this feature was written, some of the delights to tempt the palate ranged from a pan-seared duck liver foie gras, to seared white asparagus with black truffle coulis, fine crisp yellowfin tuna carpaccio tart with black truffle oil and broccoli mousse, to soft poached organic egg with green asparagus & light creamed morel mushroom sauce.
